ANGELA'S STRAWBERRY JAM

Ingredients

  1. 1kg fresh, unbruised strawberries
  2. 800gr castor sugar
  3. ¼ cup freshly squeezed, strained lemon juice

(* it is normal granulated sugar that has become finer after a few moments in a blender)

Instructions

Wash and mash strawberries. Add sugar and lemon juice.
Stir over low heat until sugar dissolves , then  increase heat.
Stir constantly until mixture reaches 105 C.
Transfer jam to sterilized jars.  When cool, refrigerate to preserve.
