- 1 ½ cups finely grated carrots
- ½ cups chopped walnuts
- 2 eggs
- 1 cup brown sugar
- ½ teaspoon vanilla
- ¾ cup sunflower oil
- 1 cup plain flower
- 1 teaspoon soda
- ½ teaspoon mixed spice, salt
Combine eggs, sugar, oil, vanilla and sifted dry ingredients in basin.
Beat at low speed until smooth.
Stir in walnuts and carrots. Bake in moderate oven 50 min.If you use cupcakes it needs less time.
Make a glaze with 4 tbsps Greek yogurt, 4 tbsps Philadelfia cream cheese, 1 tsp icing sugar and some orange zest.
Combine everything and spread over cake.
