LEMON AND WHΙTE CHOCOLATE GLUTEN FREE CAKE
- 180gr white chocolate
- 200gr almond flour
- 5 eggs
- 60gr sugar
- 120gr icing sugar
- Vanilla extract
- 3 lemon the zest
- 1 tsp baking power
- 50gr olive oil
- 50 rice flour
Beat eggs and sugar slowly and then slightly go faster.
Mix dry ingredients (almond flour, lemon zest, vanilla and icing sugar).
Cut white chocolate roughly, add baking powder, rice flour and remaining dry ingredients and mix well.
Mix the egg mixture and the dry ingredients carefully .Place the dough in baking pan ¾.
Cook 5 minutes at 200C and 40 minutes at 160C.
Make a glaze with icing sugar and some lemon juice and spread on top of cake. Sprinkle some lemon zest to decorate and serve.
