Ingredients
- 125 unsalted butter at room temperature
- 125g white granulated sugar
- 2 large eggs
- 50g all-purpose flour
- 100g ground almonds (not almond flour)
- Small pinch of salt
- 1/2 teaspoon baking powder
- 3 medium pears, ripe but firm, peeled, cored, and halved lengthwise
- 50g flaked almonds
- Icing sugar for garnish
- Instructions
• Pre-heat oven to 190C
• Grease a 25cm springform pan and line the bottom with parchment paper
• Beat the butter and white sugar in a large bowl with an electric mixer, or beat together at medium speed until pale and fluffy
• Add the eggs one at a time, beating well after each addition and scraping down the bowl all the way to the botttom between eggs
• With the mixer in low, mix in the flour, ground almonds, baking powder, and pinch of salt
• Spoon the batter into the prepared pan and even out the mixture with a spatula. The batter will fill the pan to about 3cm
• Arrange the prepared pear halves neatly in a circle on the top. Springle flaked almonds
• Bake in the pre-heated oven (190C) for about 35 minutes, or until a knife inserted into the center of the cake comes out clean.
