Ingredients
- Fyllo baklava pastry
- 4 medium size courgettes
- 300g feta cheese
- Butter
- 2tbsp finely cut spearmint
- Salt & pepper
- Instructions
• Grate the courgettes, add salt, drain after about 3 hours.
• Cut feta in small pieces and mix with the drained grated courgettes
• Add spearmint, egg and pepper
• Open fyllo packet, unfold the fyllo sheets, separate one sheet and place it flat on your work surface
• Melt butter and use brash to suchurate the fyllo sheet
• Cut the fyllo sheet in half, fold each half in two to make two strips approximately 12 cm wide, and and spead butter over them again
• Put a tbsp of the mixture on the end of each sheet
• Fold each sheet to include the mixture and form the shape of a triangle (or any other shape you like)
• Cook in moderate oven (180C) for 35 – 40 minutes, until golden brown.
