Ingredients
- 600 gr fresh lemons
- 400 gr sugar
- 1 tablespoon peppercorns
Method
Wash the lemons (remove wax first, if necessary), put in a pan, cover with water and boil for about 20 minutes, or until the lemons are soft.
Let them cool.
Remove pips and cut lemons in very slim slices. Keep as much of the pulp as possible for the pectin in it.
Boil the sliced lemons with the sugar for another 30 minutes until the mix thickens. Add the peppercorns and cook for 5-7 minutes.
Put in sterilized jars. After a few minutes, while still hot, close with airtight lids.
Keep refrigerated.
