Ingredients
- 1 cup granulated sugar
- 2 tablespoons lemon zest from fresh, wax-free lemons
- 3 cups (300 grams) almond flour
- 1/4 teaspoon salt
- 3 large egg whites (100 grams), room temperature
- 2 tablespoons good quality limoncello.
For Rolling
- 1/4 cup granulated sugar
- 1/4 cup powdered sugar
- Instructions
• Work the lemon zest in the sugar
• Mix dry ingredients
• Whisk egg whites
• Add the limoncello, almond flour and salt
• Form a dough
• Roll into balls first in the granulated sugar and then in the powdered
• Bake in a preheated oven at 170 °C for 20–22 minutes.
