Ingredients
- 250g all-purpose flour
 - 2 teaspoons cardamon powder
 - 1/2 teaspoon baking powder
 - 1/2 teaspoon salt
 - 2 eggs
 - 115g butter
 - 200g sugar
 - 1/2 teaspoon vanilla essence
 - Zest of 4 small lemons
 - 150g ground pistachios
 
- Instructions
 
• Beat butter and sugar until frothy
• Add one egg at a time and vanilla at low speed
• Put all dry ingredients and zest in a bowl and stir
• Combine two mixtures in the bowl. It will be sticky. Refrigerate to make it easier to work with.
• Use a spoon to put small balls of the mixture in a bowl with the ground pistachios
• Roll each ball in the pistachios and place it on a tray
• Cook in the oven at 180C for 15 – 20 minutes.
